How's your week, so far? Hope it's going by smoothly.
I fell completely off the non-wheat wagon with this one. It makes me happy, to be honest. ;) I've packaged them up because I do plan on sharing, and why not package them up?
Raspberry Oat Bars - makes one 9x13 inch pan
1 1/2 cups whole wheat flour
1 1/2 cup rolled oats
1 cup pecans
2 teaspoons baking powder
pinch of salt
1 cup unsalted butter, cold and chopped
1 cup brown sugar, packed
1 egg, beaten
1/2 teaspoon cinnamon
zest of 1 lemon
1 1/2 cups of raspberry jam
1 1/2 cups fresh or frozen raspberries
Preheat oven to 350f/180c. Line pan with parchment paper and set aside.
Place the flour, oats, pecans, baking powder, salt, and sugar in a food processor and pulse a few times to combine. Add chopped butter and and egg. Mix until combined. Don't over mix. Press about half the mixture into the pan. Bake for about 15 minutes, or until a light golden colour. Allow to cool on wire rack.
Enjoy your day! Back soon.
Janis

i think the children would give me an award if i made these for them! wrapped up in paper? and a second award for making up for all those times i wouldn't buy them packaged food ;)

I can practically taste that gooey raspberry yumminess! These look delicious!
Your styling is so spot on here, Janis (well, let's face it, it is always spot on!) but especially so here - LOVE!
I am deffo making these Janis, yum! You made them look nearly too pretty to eat, but I won't have to worry about that ;)
These look so delicious. Especially on a day like this with all the rain/snow/rain/coldness.

Elisa, I think you already deserve an award with all the fun things you do with your kids!
Southern Hostess, it's all the butter that makes them extra special. ;)
Will, merci! Propping and shooting food is so much fun.
I tried making these a few months ago - they were a total disaster..and now I know why. They didn't say to bake the bottom first! Now I know why the whole bar was more like granola with jam mixed in. I think that is a big step to miss in a recipe! So, thanks, now I will try again.
We still ate the whole pan of bars - it was a mess, but good.
Oh my, these look worth falling off that wagon.
And your styling is gorgeous, how pretty they are all wrapped and ready to go.
Xx
