Baked


Regular, gluten-full wheat bread, I've missed you. Life has been pretty crazy lately, and I needed to "knead", so I made a good old fashioned loaf of whole wheat bread and added apricots and pistachios. Gluten-free bread can be tasty, but I miss the kneading. ;)

Whole Wheat Bread with Apricots and Pistachios - makes one large loaf


1/4 cup honey or maple syrup (I used honey this time)
1 packet yeast
2 tablespoons vegetable oil
1/2 teaspoon salt
3 cups whole wheat flour
1 cup all-purpose flour
1 cup dried apricots, chopped
1 cup pistachios, chopped


In a medium bowl, mix together 1 3/4 cups warm water (about 115f), honey and yeast. Let stand for about 5 minutes, or until mixture becomes foamy. In a separate bowl, stir together whole wheat flour, all-purpose flour, salt, apricots and pistachios. Add yeast mixture, then oil. Stir to combine, then turn dough out onto a floured work surface. Now here comes my favourite part: knead for about 8 minutes, or until dough is elastic and smooth. Whoohoo!



Place dough in a lightly oiled bowl, turning to coat. Cover with a damp cloth and let stand, in a warm spot, for about 90 minutes or until dough doubles in size.
Punch down dough, and knead a few times, on a lightly floured surface. Shape into a round loaf, and place on a lightly oiled baking sheet. Cover with a damp cloth and let rise for another 45 minutes or until doubled in size. Preheat oven to 375f.  Make a couple of slashes, with a sharp knife, on top of dough and bake for about 45 minutes or until bread sounds "hollow" when tapped. Cool on a wire rack. This bread is perfect, toasted, for breakfast, and also makes great sandwiches. Love it.

Baked


Did you have a good weekend? Hope so! If you are in the Vancouver area, did you thoroughly enjoy our little blip of summer? I'm sure there is more to come ;)

I baked some healthy muffins over the weekend. I just call them "Morning Muffins", as I don't want to call them Raspberry, Brown Rice, Almond, and Orange muffins. When I first tried these out, I thought they might have a have real rice flavour, which I didn't want, but they don't. The orange flavour comes through the most - they're really delicious, especially warm.


Morning Muffins - makes one dozen

1 cup cake and pastry flour
1/2 cup whole wheat flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup toasted, finely ground almonds
1 cup short grain brown rice
1 1/2 tablespoons orange zest
1 cup plain yogurt, at room temperature
1 egg, at room temperature
1/4 cup unsalted butter, melted
1/4 cup packed light brown sugar
1 teaspoon vanilla
1 cup raspberries, fresh or frozen

Preheat oven to 375f.
Whisk together the ground almonds, flours, baking powder, baking soda, rice, salt and orange zest. In another bowl, whisk together the yogurt, egg, butter, sugar and vanilla. Pour over the dry ingredients, and stir just to combine. Do not over mix. Fold in raspberries.




Line a 12 hole cupcake tin with paper cups, and fill to 3/4 full with batter. Bake in centre of oven for 15-18 minutes, or until golden on top and a skewer, inserted in centre, comes out clean.
Transfer muffins to a wire rack and serve warm.

Baked on Monday - Cheese & Chili Cornbread


I don't know why this is called cornbread when it really is more like corncake. Either way, it's delicious and moist. I find some cornbreads are kind of on the dry side, but this one is not at all dry. I love the kick of the chili too.

Cheese & Chili Cornbread - makes on 9" round cake

1 1/4 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup cornmeal
2 tablespoons sugar
2 jalapeno chilies, chopped
1 1/4 cups grated sharp cheddar cheese
1 1/4 cups buttermilk
3 tablespoons unsalted butter, melted
1 egg, beaten


Preheat oven to 375f.
Sift the flour and baking soda into a bowl, then stir in salt, cornmeal, sugar, chilies, and cheese.


In another bowl, beat together buttermilk, melted butter and egg. Pour into the dry ingredients fold in until no flour pockets remain. Spoon batter into greased 9" round pan (or 8" square pan). Bake for 22-25 minutes or until a skewer, inserted in centre, comes out clean.


Let cool in pan for 10 minutes, then turn out onto wire rack until completely cool. I can't wait that long, and I start to eat pretty much immediately.

Perfect with coffee and post production.  I can't stop eating it. So much for sharing.
