Baked

The week has flown by. Where did it go? Hope you've had a good week so far!

Since we're heading into party season, thought I'd share one of my fave appetizer recipes. It involves a nut crust, as I prefer that over a traditional crust (a little healthier too, unless you're allergic to nuts!), and it has way more flavour as well.  Party snacks are my favourite way of eating, but sadly not everyday is a party ;)

Mediterranean Tarts with a Nut Crust - makes 24 mini tarts

Crust:
3 cups almond meal
pinch of salt
1 teaspoon baking soda
2 tablespoons chopped parsley
1/3 cup vegetable oil
2 tablespoons water

Filling:
1/2 small red onion, finely chopped
1- 5oz container of baby spinach
1/3 cup parmesan cheese
1/3 cup finely chopped sun-dried tomatoes (if you use jarred tomatoes in oil, drain oil first)
3 large eggs, lightly beaten

To make crust:
Preheat oven to 350f/180c. Lightly spray a mini muffin tin with oil and set aside.
Whisk together the almond meal, salt, baking soda and parsley in a large bowl. Stir in the oil and water and mix together until well combined and clumps together without crumbling apart. Break off small pieces and press into each muffin cup. Bake for about 10 minutes until just starting to brown. Allow to cool before filling.

To make filling:
Saute the onion in a little oil, over medium heat, for about 5 minutes until starting to brown. Add the spinach and tomatoes and cook for a few minutes until spinach is wilted. In a large bowl, lightly beat the eggs, then stir in cheese. Stir in the spinach mixture and combine well. Spoon into each crust and bake for about 20 minutes, until lightly browned on sides and cooked through. Try to save some for your guests. They're so good.

Do you prefer a traditional crust? Have you made a nut crust? Let me know!

Baked

Well, that's a wrap for our labour day long weekend. Hope you all had a fun one! We've ended ours with a baby shower (for my new niece, Alice), and some really good cupcakes. I had to make sure the remaining cupcakes went with anyone but me. I cannot be trusted. The combo of almond and orange is just too much.

Almond Cupcakes with Orange Glaze - makes about 48 mini cakes

1/2 cup unsalted butter, room temperature
1 cup sugar
2 eggs
1/2 teaspoon almond extract
1 cup all-purpose flour
1/2 cup almond meal (finely ground almonds)
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk

Orange Glaze

2 cups icing sugar
2 tablespoons milk
1/2 teaspoon orange extract
Food colouring

To make cupcakes:
Preheat oven to 350f/180c.
In a large bowl, beat butter and sugar until light and fluffy. Beat in eggs one at a time, then add almond extract. In another bowl, whisk together flour, almond meal, baking powder and salt - stir into butter mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk. Spoon batter into paper lined cupcake tin.
Bake for about 20 minutes, or until skewer, inserted in centre of cupcake, comes out clean. Transfer to cooling rack to cool completely before icing.

To make glaze:
In a small bowl, mix together all ingredients. You want this to be quite runny, not a thick icing. Spread over tops of cupcakes, and eat immediately!

These are so easy to make, and a recipe I use often! Again, almond and orange. Mmmm.

It's so late in the day, so I hope your Monday was a good one!

Back soon.

Baked on Monday - Plum Cakes

Hi all! To my American  blog friends, I hope you had a perfect and fireworks filled 4th of July!

I can smell the plum cakes baking....mmm. These are so easy to make. You just dump all the ingredients together in a bowl, mix, pour into cupcake tin, and top with the plums. Done. I guess I should give you the actual recipe now...

Plum Cakes - makes 12

3/4 cup all-purpose/plain flour
2 cups icing sugar
150g (5 1/4 oz) almond meal (finely ground almonds)
180g (6 1/3  oz) melted butter
6 egg whites
6 plums, halved

Preheat oven to 320f/160c. Place flour, sugar, almond meal, butter and egg whites in a bowl and mix until well combined. Spoon the batter into a well greased 12 hole, 1/2 cup, muffin tin. Top with halved plums, cut side up, and bake for 30-40 minutes or test with a skewer.  Cool on a wire rack.

These go well with a little real iced tea! Enjoy.

Paul Smith Is Right

According to Paul Smith, you really can find inspiration in everything.

These little party place cards were discovered buried in a bunch of  junk in my mom's storage space.  She doesn't know why she has them (that is the running theme of her storage space), but I'm happy she does.  They appear to be from the 60's and kind of brittle.

I have now been inspired to have some green tea and plan a Japanese Sake party.   I've also decided to never, ever, have a storage space.
